STRAWBERRY-APPLE BAKED FRENCH TOAST

    • 3/4 Cup Strawberry Jam

    • 1/2 Cup Packed Brown Sugar

    • 1/3 Cup Butter (use 10 tablespoons if doubling recipe)

    • 2 Medium Tart Apples, Peeled and Sliced

    • French Bread cut in 3/4 Slices

    • 5 eggs (may also use Egg Beaters)

    • 1 1/2 Cup Milk

    • 1 Teaspoon Vanilla

    • Cinnamon (Optional)

Spray 9x13 with cooking spray. Combine jam, sugar and butter in saucepan and cook over medium heat for 4 min. Or until the butter is melted and mixture is well blended. Pour into pan to cover bottom. Top with apple slices and cover with bread. Beat eggs, milk and vanilla till well blended and pour over bread. Cover and refrigerate overnight. Bake at 350 for 30-40 minutes. Sprinkle with powder sugar or cinnamon and garnish with fresh strawberries.

Can also use blueberries, peaches, etc

JALAPENO & EGG APPETIZERS

Spray a 13x 9 pan w/Pam

Layer:

  • Jalapenos Slices - cut into smaller pieces and layer on the bottom. Use as many as you like.

  • 1 lb Shredded Monteray Jack Cheese (you can also use any other Jack cheese or a blend)

  • 1 large container of Egg Beaters - Pour over Jalapenos & Cheese

  • Bake 350 degrees - 50 - 55 min or until golden brown

The egg mixture will rise. Once it is taken out of the oven, it will fall.

ARTICHOKE SQUARES

2 - 6 oz jars marinated artichokes

1 small onion, finely chopped

1/4 cup dry bread crumbs

1/8 tsp black pepper

1/4 tsp oregano

1/4 tsp Tobasco

1/4 tsp salt

2 cups grated extra sharp cheddar cheese

2 tblsp shopped parsley

4 eggs

Drain artichokes, reserving marinade from 1 of the jars. Saute onion in reserved marinade. Cut up artichokes. Beat eggs.Combine eggs, crumbs, parsley, seasoning, artichokes, and sauteed onions in marinade. Pour into a 7 x 11 greased pan. Bake at 325 for 30 minutes. Cool, cut and serve.
